Mexican Fish Pie
We thought you might like this recipe from the galley of Fantasia our 51 ft Formosa ketch currently cruising the Sea of Cortez
Mexican Fish Pie
Serves 2
2 fillets of white fish – we used Sierra but any white fish will do
Half small onion
Sunflower oil
Cream – we used half a carton of ‘La la’ cream but cream fraiche would work just as well
2 medium potatoes
Butter
Milk
Salt and pepper
Boil the potatoes, drain and mash adding milk and butter to taste.
Cook the fish by steaming or on the BBQ until flakey. Finely chop the onion and fry in a litle oil until translucent.
Combine the onion, flaked fish, cream and season with salt and pepper. Put in ovenproof dish and spread mashed potatoes on top.
Place in centre of moderate oven and cook for about 20 minutes until the top has browned.
